Sweet Devils

I was inspired to create this recipe over Thanksgiving when I accidentally took a bite of sweet potatoes at the same time as a deviled egg.  And this sweet twist on deviled eggs turned out delicious!  Next time I would maybe add a spoonful of bacon grease to the egg yolk mixture to give it a sweet & smoky flavor.

Sweet Deviled Eggs

  • 10-12 eggs, hard-boiled & peeled
  • 1 medium-large sweet potato
  • 1/2 tbsp olive oil
  • 2 pieces of bacon
  • paprika

While eggs are boiling, roast the sweet potato for 40-45 minutes at 400 degrees, piercing it with a fork before putting it in the oven.  Cut each hard-boiled egg in half and scoop yolks out into a bowl.  Once sweet potato is done, scoop flesh and add to yolk mixture.  Add olive oil and combine thoroughly.  Scoop egg yolk/sweet potato mixture back into each egg and sprinkle with paprika.  Crumble bacon and garnish each egg with a small piece.
