Paleo Pad Thai

Yes, I’m the latest to jump on the Paleo Pad Thai bandwagon.  And I have to tell you, it’s been so long since I’ve ordered the real thing in a restaurant (personal victory!), that I couldn’t remember what it’s supposed to taste like after eating my own version.  I looked up a few recipes, and I think I went a little heavy on the nutty taste (almond butter) and could have used more fish sauce.  Oh well, this was still delicious!

I started by making a variation of Everyday Paleo’s No Peanut Sauce mixed with The Clothes Make The Girl’s Sunshine Sauce.  

Project Paleo’s No Peanut Sunshine Sauce

  • 1/2 cup almond butter
  • 1/2 cup coconut milk
  • juice from 1/2 a lime
  • 1 clove garlic
  • 1/4 tsp powdered ginger
  • 1/2 tsp crushed red pepper
  • 1 tbsp coconut aminos
  • 1/2 tbsp fish sauce
  • dash of cayenne pepper

Put it all in a food processor or blender, and blend!  Half is for this recipe, and the other half is for dipping or other lunches/dinners.

Pad Thai

  • 1 lb chicken tenderloins, cut into 1/2” chunks
  • 1 pint shiitake mushrooms
  • 1/2 white onion, sliced thin
  • 1 tbsp coconut aminos
  • 4 large carrots, peeled, and then sliced into ribbons using the peeler (think pappardelle) - you could use another veggie noodle instead
  • Half a batch of No-Peanut Sunshine Sauce
  • 1 tbsp coconut oil
  • cilantro & green onions for garnish

Heat coconut oil over medium heat in a large pan.  Add chicken, and cook until golden brown on one side.  Flip chicken, and add mushrooms & onions.  Cover to cook until mushrooms start to soften and chicken is fully cooked, about 5 minutes or less.  Add carrot noodles and cook for another 2-3 minutes, until they also soften.  Add coconut aminos and No-Peanut Sunshine Sauce, and mix well.  Cook about 2 minutes, then add cilantro & green onions.  

Ooh la la!

This was super delicious, and I’ll definitely make it again, varying up the veggie ingredients with what I’ve got on hand.  Adding some scrambled eggs would be good too…if we hadn’t gotten stuck in traffic and missed our farm share pick-up last week.
