Prepping to Count
Bad news: apparently I cannot eat whatever I want and not gain weight, paleo or non. The pounds have been piling on in the last 6 weeks - I’m sure this is partly due to all of the travel I’ve been doing and not being able to cook my own food. But it’s also due to my complete lack of self control. So fun’s over, I have to count calories until things settle back down (read: my clothes fit again). They will still be paleo calories, though!
In preparation for heading back to work this week after taking some time off for the 4th, I spent a few hours in my kitchen today. Here are the results:
Beet Salad (click the title for the recipe)

(Omitted the bacon this time to save on calories…and I also used fat free mayo. Don’t kill me - desperate times!)
Sesame Ginger Scotchies
- 6 hard-boiled eggs
- 1 1/4 lbs ground pork
- 1 tbsp sesame oil
- 1 tsp ground ginger
- 1 tsp garlic powder
Preheat oven to 375. Mix pork and seasoning and separate into 6 equal sections. Flatten each section with your palm and place a hard-boiled egg in it. Roll until the egg is wrapped in the pork, like a giant meatball. Place each ball on a baking tray. Bake until golden brown and starting to crisp, about 20-25 minutes.

I made a few of the scotchies smaller by cutting an egg in half instead of using a whole egg per scotchie. Each small scotchie is about 115 calories - and they’re about 1/4 to 1/3 the size of the larger ones. Starting to figure out how the weight gain has happened.
Deviled Eggs
(I had two extra hardboiled eggs, so the proportions here are slightly strange)
- 2 hardboiled eggs
- 1 tsp mayo (I cheated and used fat free, sorry)
- 1 tsp mustard (I used a new Trader Joe’s garlic aioli version that’s about 95% paleo)
- splash of pickle juice
- sprinkle of paprika
Cut eggs in half lengthwise and scoop out yolks into a mixing bowl. Add mayo, mustard, and pickle juice and blend well. Refill eggs with the mixture and sprinkle with paprika.

And last, but not least, I tried a version of this on the 4th and just had to recreate it.
Sesame Broccoli Slaw
- 1 package of Trader Joe’s broccoli slaw
- 1/4 cup sliced almonds
- 1/4 cup sesame oil
- 1 tbsp wheat free gluten free soy sauce
- 1 tbsp unseasoned rice vinegar
- 3/4 tsp ginger powder
Mix it all together and enjoy!

Time to go get started on dinner!
