Working title: Presto Carrot Pesto
Nick’s been throwing out “hilarious” titles for tonight’s post….”Eyes for Pork,” “Pork for Bugs [Bunny],” “I see pork”….you get the gist. I think I just heard “Porkvision”…now you know why I write these posts. (For a good time, you can read a few more titles at the bottom…let me know which your favorite is.)
Anyways, I can’t think of a clever title tonight, but I can tell you I was really surprised how good the carrot pesto turned out. I actually made it about a week ago, but we only just ate it tonight. Super easy and a sweeter alternative to traditional pesto.
Carrot Pesto
- 2-3 large carrots, peeled and cut into chunks for a food processor
- 4-6 cloves of garlic, depending on your preference
- 1/4 cup walnuts
- olive oil
- sea salt to taste
Blend carrots, garlic, and walnuts in a food processor. Add olive oil slowly until consistency becomes like a paste. Add sea salt to taste.
I sauteed the pesto with fresh Italian sausage from Grateful Growers, and we had roasted cauliflower & brussel sprouts as a side.

Yep, that’s my entire portion. On a salad plate. I’m on my best behavior.
